When the element is operating normally, it should glow red hot. If it does not glow at all, then it must have failed. To verify this, check the element for any physical damage such as holes or blisters. Also, check with a multimeter to confirm continuity of the element.
The reason your salamander is heating unevenly is due to grease and food buildup from continued use. It must be kept clean to maintain peak performance.
The thermostat controls when voltage to the element is cut off when the desired temperature is reached. The salamander can malfunction if it is defective, thus causing it to heat too high, heat too low, or turn off at random times.
The most common cause is grease buildup on drip trays or other heating surfaces. Clean drip trays daily and wipe surfaces after each use.
Usually, there is a heavy amount of grease around the lift rails and along the mounting locations. This happens in salamanders that are not cleaned every day.
